- Vigna Ospedaletto, Vigna Colombarone.
Color, Nose & Palate
- Intense ruby red color with violet edges and delicate bouquet of red fruit.
- The grapes are de-stemmed and pressed, transported in the fermentation tanks at a
temperature of about 28/30 °C to macerate for extraction of aromatic and coloring for about 8/10 days. - After malolactic fermentation, the wine is aged for about 5/6 months in steel.
- Fermentation takes place separately for the two different grapes, as Cabernet has a
maceration period a bout five days longer than the Merlot. - Is then refined for about 3 months in the bottle.
